Fall Fruits & Vegetables

Fall is finally here! 

I love summer veggies and salads. It seems easier to be healthy and eat fresh in the summer.... Farmers market salads. Handpicked berries... But fresh and healthy does not have to be isolated to the summer season. There are so many good options perfect for fall. As the season shifts, in-season fruits and veggies do, too. It's actually really good for your body to eat according to what is in season!

I've rounded up my top 5 picks for fall fruits and veggies to help you live your healthiest life!

Figs I'm obsessed with figs! I could eat a whole carton of them! Not only do they taste delicious, they are also fabulous for gut health because they are full of prebiotics. 

Apples  A crowd please for a reason. Filling and full of vitamins and fiber. Always opt for organic when buying apples. Apples and almond butter are a great fall snack. 

Side note- Double check that your almond butter doesn't have added sugar and preservatives. I love Justins almond butter for this reason! 

Kale is the ultimate superfood and can be consumed so many ways- salads, kale chips, smoothies, soups... I'll share kale recipes here soon!

However, my biggest tip for eating a kale salad (and enjoying it), is massaging the kale with salad dressing or olive oil first. I typically put on kitchen gloves, mix the kale with the dressing in a big bowl, and use my hands to rub each piece. It breaks down the toughness and adds a ton of flavor!

Spaghetti Squash Known as a cold weather superfood, it's high in fiber and rich in antioxidents. I love to cut it in half, bake it, and then serve with olive oil + s&p. Tastes just like noodles to me! This is also a great way to create a hearty, but healthy fall soup.

Sweet potatoes High in vitamin A, sweet potatoes are so good for healthy and glowy skin. They are also lower in calories and carbs than regular white potatoes. I love a sweet potato with Kerrygold butter and sprinkled with brown monk fruit and a pinch of salt!
